But there are also those who know how to love it, appreciate it and know how to exploit it with respect. I was lucky enough to know many of these people

Threshing is usually done with special machines but human hands are still needed in small and less accessible corners.
In one of the photos a small field of about 5,000 square meters. It will produce about 6/7 quintals of fine Garfagnana spelled.
